Red Shoulder Ranch? Chardonnay is a single-vineyard wine produced from grapes grown in the Carneros appellation. Shafer?s Red Shoulder Ranch vineyard is planted to five different Chardonnay clones selected for their small clusters, low yields and distinctive flavors. The wine is fermented using the yeasts that grow wild in Carneros, which adds an extra dimension of complexity. It is spared malolactic fermentation in order to retain abundant natural flavors and acidity. The wine remains in barrel for 15 months, with the lees stirred weekly by hand to create a rich, creamy texture.
